Tofu can be used to make a lot of tasty & healthy dishes.
1/2 container firm or extra firm tofu (well-drained)
1 small onion (white or yellow, diced)
3 spring onions (diced)
1 garlic clove (minced)
3/4 cup mushrooms (fresh, diced small)
2 tbsp flour
2 tbsp soy sauce
black pepper (to taste)
2 tablespoons oil
Press and drain the tofu.
Gently mash into small crumbles in a large bowl.
Sauté the diced white or yellow onion and garlic in olive oil for 3 to 5 minutes, until the onions are soft.
Add the green onions, and the chopped mushrooms and cook for another 5 minutes, or until mushrooms are cooked.
Add flour, soy sauce, and a dash of pepper into the bowl along with the tofu and mix to combine well.
Gently form the tofu mixture into patties, pressing everything together to form round patties about 1-inch thick.
Heat about two tablespoons of oil and cook each patty until the tofu veggie burgers are done, about 5 minutes on each side. You can also use an indoor grill pan to grill your veggie burgers if you have one.
