2 large English cucumber
1/2 cup lemon juice
1/2 cup low carb sweetener
1 1/4 cups fresh mint leaves
1 1/4 cups water or sparkling water
1. Chop the cucumber into small pieces.
2. Add cucumber, lemon juice, low carb sweetener, water and 1/2 of the mint leaves to the blender. Purée until smooth.
3. Place a fine mesh sieve over a bowl and pour the purée through it, pressing against the sieve with a rubber spatula to extract as much liquid out as possible.
4. Fill a large pitcher halfway with ice cubes. Add the juice. Serve with sprigs of mint and slices of lime.
