With only 5 simple ingredients (flours, non-dairy milk & eggs, plus oil for the griddle), easy to make, and ready in about 15 minutes, this is a timeless healthy and easy pancake recipe that will win over all pancake lovers, kids and all!
2 large eggs
2 cups / 250ml soy milk or other plant-based milk
1 1/8 cups all purpose gluten free flour
1 1/8 cups xanthan gum
1. Mix the all-purpose gluten free flour and xanthan gum.
2. Whisk the eggs and soymilk together to combine. Add the mix flour and beat until the batter is smooth.
3. Pre-heat a non-stick griddle, or pan with oil spray. Pour about 1/3 cup of batter per pancake. Cook pancakes for 1 to 2 minutes, or until bubble appear on the surface and the bases are golden brown. Flip and cook until golden.
4. Serve hot.
5. This recipe can be doubled or tripled.
