Seaweed or sea vegetables are forms of algae that grow in the sea. It’s extremely versatile and can be used in many dishes. This seaweed salad is not only delicious and wondrously simple to prepare, it’s also packed full of health benefits.
1/2 oz of dried wakame seeweed
1 tbsp miso
1 tbsp soy sauce
1 tbsp mirin
1 tbsp white roasted sesame seeds
1 tbsp sesame oil
1 tsp rice vinegar
1 tsp yuzu juice
pinch of sea salt
1. Re-hydrated the wakame and hijiki seaweed in a bowl of water for 20 minutes.
2. Drain the seaweed after re-hydrating. Slice into appropriate bite sized pieces.
3. Prepare the dressing. Mix the miso, soy sauce, mirin, sesame seeds, sesame oil, rice vinegar, yuzu juice, chilli and salt in a bowl and stirring with a whisk.
4. Place in a bowl and pour over the dressing.
